Traditionally a site map is a listing with hyperlinks to all of the pages on your website. It is much like a Table of Contents or an Index to the site content, an overview of the website.
Site maps are now used by Google and other search engines as a tool to index all of the pages on the website. Though having a site map does not guarentee that all of the pages will be crawled or that all the crawled pages will be indexed, it is the best insurance that a search engine can learn about the site.
These type of site maps are called XML Site Maps and are written in a specific format that the web crawlers (spiders or bots) can read.
